Banana Nut Bread Recipe: Blossom Accents in the Kitchen

Recently we've been too cold and snowed in to head outside so I've been getting a lot of things done along with some baking. I love a good moist banana nut bread, the perfect dessert with some warm tea!

I found this recipe a few months back and I have to say it is FANTASTIC and fairly simple!

Start with preheating the oven to 350 degrees F (170 C). Grease a 9x5" pan.

Sift the flour, baking soda and salt into a large bowl. ( I actually skipped the sifting-lack of time with a little baby around the house so I just dumped all three ingredients in the bowl).

In a separate bowl, use a mixer to mix together the butter (room temperature) and sugar until smooth. Then stir in the bananas, eggs (recipe calls for beaten eggs but I skipped this extra step) and walnuts (I used pecans because that's what I had) and mix until well blended.

Pour the wet ingredients into the dry mixture or vice versa and stir just until well blended. Pour into your greased 9x5" pan.

Bake for 50-60 minutes or until your toothpick comes out clean. Check often towards the end! Let it cool in the pan and turn out onto a cooling rack and let it cool completely. Ideally wait till the next day to eat this delicious banana nut bread! You will not be disappointed!! I wrapped mine in some wax paper for easy storage. Bon appetite!!
